Carefully Selected Natural Lava Stone

The inner chamber of every Eleganza pizza oven is crafted using a one piece molding process. A special ceramic clay, made from an original blend of lava stone, ceramic clay, and heat retaining minerals, is poured into a mold and shaped. After being removed from the mold, each chamber is sun dried for six months, allowing it to absorb ample natural minerals before being finished into its refined dome and arch form.

The oven floor is made from a single 50 millimeter thick slab of natural lava stone, carefully selected from the finest materials across four countries for optimal oven cooking performance.

The essence of stone oven baking lies in the balance of infrared radiation, heat retention, and odor neutralization.
For example, lava stone from Mt. Fuji is known for its deep black color and large porous structure. However, its low density yields weaker infrared radiation and reduced durability, which makes it unsuited for professional use.

Custom Heater by a Trusted Maker

Through numerous commercial installations,
we have often received requests for an electric powered model.

However, conventional heaters have a technical limitation: the maximum temperature of the heating element is lower than the heat resistance of the heater itself.

Because of this property, typical heaters are poorly suited for pizza ovens that must maintain consistent high temperatures throughout the chamber.

To overcome this challenge, we collaborated with manufacturers both in Japan and overseas, and ultimately developed a special Super Sheath Heater. Reaching 500°C with an output of just 6.2 kW, it is comparable to a compact commercial oven while achieving heat resistance strong enough to withstand its own radiant energy.

Whether in gas or electric configuration, Eleganza delivers the same exceptional performance. The natural convection of the dome and the heat retention of the lava stone work together synergistically, reproducing the aroma, texture, and heat flow of a traditional wood fired oven with remarkable consistency.

The abundant far infrared heat also helps reduce unwanted odors, allowing ingredients to retain their natural flavor while finishing with a beautifully crisp aroma. Combining the high heat output and stability required of a commercial pizza oven, it recreates the appeal of a traditional stone oven that cannot be achieved with conventional electric ovens.

The inner chamber is formed as a single piece using a specially formulated ceramic clay, then finished through six months of natural sun drying. This creates a highly durable structure that offers a well balanced combination of infrared heat, heat retention, and odor reduction. Built for commercial kitchens, it provides the strength and reliability needed for long term, consistent cooking performance. The result is powerful heat along with smooth, even heat circulation, similar to what you would expect from a traditional wood fired oven.

Specially Designed for High Power Efficiency

With power consumption similar to a compact oven at 6.2 kW, it uses a Super Sheath heater capable of reaching temperatures of up to about 930 degrees Fahrenheit. The heater is highly heat resistant and designed to deliver stable performance over long periods without being affected by its own heat. While electrically powered, the oven delivers heat output and air circulation comparable to a stone oven, producing results on par with gas fired pizza ovens. It efficiently recreates the rich, toasty character of wood fired cooking, making it a dependable choice for commercial kitchens.

While baking bread is possible, pizza ovens are designed with different temperature characteristics, making them less suitable for consistent bread baking.
Is the oven delivered fully assembled?
Yes. The oven is generally delivered fully assembled and positioned on site using a hand pallet truck.
Can larger models be installed on the second floor or above?
Yes. Larger models can be installed on upper floors, as they are designed to be disassembled and transported by elevator when required.
