Background: How to Balance American and Italian Pizza
American pizza is known for its generous toppings and thicker crust—baked at a slightly lower temperature for a slightly longer time. Neapolitan pizza, on the other hand, uses ingredients that cook quickly and is finished all at once with high heat in a short time.
To combine these opposite characteristics in a single oven, we carefully designed the “baking parameters” on site—floor temperature, how the top flame is applied, and the flow of intake and exhaust. Through repeated trial-and-error, we found the perfect balance: not too low, not too high. The result was Trattoria J Marina’s signature “Best-of-Both-Worlds Pizza.”
